🫘 2 (16 oz) cans Gigante or Butter Beans, with liquid
🌶️ 1 Jalapeño or Serrano Chili, deseeded & finely minced
🧄 4 Garlic Cloves, grated
🫚 1/2 inch piece Fresh Ginger, grated
🧅 1 bunch Scallions, whites & greens separated
🍜 3 tbsp Chinese Dark Roasted Sesame Paste
🥢 1 tbsp Soy Sauce
💧 ½ cup Stock or Water
🌶️ 2 tbsp Gochugaru
🥄 1 tsp Sesame Oil
🍶 1/2 tsp Rice Wine Vinegar
🫒 Oil for sautéing
🌱 Sesame Seeds for scallion salad garnish
Instructions
1- Prepare Aromatics:
- Heat a non-stick skillet over medium heat and add oil.
- Sauté grated ginger, garlic, minced jalapeño or serrano chili, and the white parts of the scallions until fragrant.
2- Combine Bean Ingredients:
- Add the cans of gigante or butter beans with their liquid into the pan.
- Stir in the sesame paste, soy sauce, and stock or water. Ensure all ingredients are well combined.
3- Simmer:
- Bring the mixture to a simmer.
- Set a digital kitchen timer for 4 minutes, allowing the beans to cook and the sauce to thicken. Stir occasionally.
4- Make Scallion Salad:
- While beans are simmering, slice the scallion greens into thin strips.
