Ingredients
Miso Peanut Sauce:
🥜 40g Manilife Peanut Butter
🍯 25g White Miso
🍶 20ml Rice Vinegar
🧂 20ml Soy Sauce
🍬 1 tbsp Sugar
📍 ½ tsp Ajinomoto MSG
💧 65ml Water
Herb Salad:
🥒 ½ Cucumber
🌿 10g Fresh Coriander
🍀 4 Spring Onions
Spicy Chicken:
🧄 1 Garlic Clove
🌶️ 1 tbsp Gochujang
🌶️ 1 tbsp Korean Chilli Flakes
🥢 1 tbsp Dark Soy Sauce
🍶 1 tbsp Rice Vinegar
🍬 1 tbsp Sugar
🍗 400g Chicken Mince
🥄 1 tbsp Vegetable Oil
To Serve:
🍜 200g Udon Noodles
Instructions
1- Spicy Chicken Sauce Preparation:
- In a small mixing bowl, combine 2 tablespoons of Gochujang, 1 teaspoon of dark soy sauce, 1 teaspoon of light soy sauce, 1 teaspoon of chili flakes, 1 teaspoon of honey, and 1 teaspoon of rice vinegar. Mix until well combined.
2- Vegetable Preparation:
Slice the mini cucumbers into thin half-moon shapes.
Slice the spring onions into thin strips.
Roughly chop the coriander. Rinse all in water to keep crisp.
3- Cooking Ground Chicken:
Heat 2 tablespoons of cooking oil in a frying pan over medium-high heat on a portable gas stove.
Add the ground chicken, season with salt and pepper, and cook until browned, breaking it apart with a wooden spatula.
Pour in the spicy chicken sauce and stir well to coat the chicken evenly. Cook until the sauce is thickened and the chicken is well coated. Set aside.
4- Udon Noodles:
- In a small pot, boil water and cook Udon noodles according to package directions until tender.
5- Peanut Sauce Preparation:
In another mixing bowl, combine 3 heaped tablespoons of peanut butter, 1 teaspoon of light soy sauce, 1/2 teaspoon of MSG, 1 teaspoon of sesame oil, and 1 teaspoon of rice vinegar.
Add 1/4 cup hot water and whisk vigorously until smooth and creamy.
6- Combine Noodles and Sauce:
- Transfer cooked Udon noodles directly from the pot into the peanut sauce bowl. Mix to coat noodles thoroughly.
7- Assemble the Dish:
In a serving bowl, place the peanut-coated noodles and top it with the spicy ground chicken.
Garnish with sliced cucumbers, spring onions, and chopped coriander.
8- Enjoy:
- Mix thoroughly using chopsticks and savor the mélange of spicy, creamy, and crunchy textures.
