Ingredients
🥦 5 cups broccoli florets, cut small
🌿 2 cups baby spinach
🧅 1 small yellow onion, quartered
🧄 4 garlic cloves, peeled
🫒 1 tbsp olive oil
🍲 3 cups Kettle & Fire Classic Beef Bone Broth
🧀 1/2 cup cottage cheese
🧀 6oz feta cheese, reserve a little for topping
🍋 Zest and juice of ½ large lemon
🌿 1 tsp dried oregano
🌶️ 1/2 tsp chili flakes, plus extra for garnish
🧂 Salt
⚫ Pepper
🌿 Optional Garnish: Fresh dill
🧀 Optional Garnish: Finely shredded Parmesan or Manchego
Instructions
1- Preheat Oven:
- Set the LG ThinQ oven to 415°F (213°C).
2- Prepare Vegetables:
- Cut the broccoli into small florets, ensuring even cooking.
- Quarter the yellow onion and peel the garlic cloves.
3- Season for Roasting:
- In a rectangular grey baking sheet with gold-colored handles, combine broccoli florets, quartered onion, and garlic.
- Drizzle with olive oil and season with oregano, chili flakes, salt, and pepper.
4- Add Feta:
- Place the block of feta cheese in a corner of the baking dish with the vegetables.
5- Roast:
- Transfer the baking dish to the preheated oven and roast for 28–30 minutes, until the vegetables are golden and slightly crisp at the edges and the feta is softened and slightly browned.
6- Blend Ingredients:
- Transfer roasted vegetables and feta into the Wolf Gourmet blender.
- Add Kettle & Fire Classic Beef Bone Broth, baby spinach, cottage cheese, lemon zest, and lemon juice.
7- Blend until Smooth:
- Secure the blender lid and blend until smooth and creamy.
8- Warm Through:
- Transfer the blended soup to a pot and gently warm over medium heat.
9- Adjust Seasoning:
- Taste and adjust salt, pepper, or other seasonings if needed.
10- Serve and Garnish:
- Ladle soup into bowls.
- Garnish with reserved crumbled feta, fresh dill, extra chili flakes, and finely shredded Parmesan or Manchego, if desired.
