Ingredients
Miso Peanut Sauce:
🥜 40g Manilife Peanut Butter
🍯 25g White Miso
🍶 20ml Rice Vinegar
🧂 20ml Soy Sauce
🍬 1 tbsp Sugar
📍 ½ tsp Ajinomoto MSG
💧 65ml Water
Herb Salad:
🥒 ½ Cucumber
🌿 10g Fresh Coriander
🍀 4 Spring Onions
Spicy Chicken:
🧄 1 Garlic Clove
🌶️ 1 tbsp Gochujang
🌶️ 1 tbsp Korean Chilli Flakes
🥢 1 tbsp Dark Soy Sauce
🍶 1 tbsp Rice Vinegar
🍬 1 tbsp Sugar
🍗 400g Chicken Mince
🥄 1 tbsp Vegetable Oil
To Serve:
🍜 200g Udon Noodles
Instructions
1- Prepare the Miso Peanut Sauce:
In a mixing bowl, combine Manilife Peanut Butter, white miso, rice vinegar, soy sauce, sugar, and Ajinomoto MSG. Whisk until smooth.
Gradually add water while whisking to create a velvety and pourable consistency. Set aside.
2- Make the Herb Salad:
Slice cucumber into thin half-moons.
Pick coriander leaves and finely slice the green tops of the spring onions.
Combine all in a bowl.
3- Blend the Chilli Sauce for Chicken:
- In a blender, combine garlic, gochujang, Korean chilli flakes, dark soy sauce, rice vinegar, sugar, and chopped white parts of the spring onions. Blend until smooth.
4- Cook the Spicy Chicken:
Heat a large frying pan over high heat using your Campingaz portable gas stove.
Add vegetable oil, then press in chicken mince flat. Allow it to brown on one side before breaking it up.
Pour in the blended chilli sauce and stir. Cook for 2–3 minutes until the sauce is thick and sticky.
5- Cook the Udon Noodles:
- Boil noodles according to package instructions in a saucepan. Drain and reserve some noodle water.
6- Combine Noodles with Sauce:
- Immediately toss the drained noodles with the miso peanut sauce and a splash of reserved noodle water until glossy and well coated.
7- Assemble and Serve:
Divide noodles into serving bowls.
Top with spicy chicken and herb salad.
Drizzle extra miso peanut sauce over if desired.
