🍅 1 vine tomato, cut in half, grown in Ireland
🍄 1 cup chestnut mushrooms, sliced
🍞 1 square piece potato bread, cut diagonally, from a local bakery
🥚 1 Dunnes Stores Corn Fed Large Egg
🧈 1 tablespoon butter, divided in knobs
🌿 A small sprig of fresh thyme
🧂 Sea salt
⚫️ Black pepper
💧 A spoonful of water
Instructions
1- Prepare the Cooking Surfaces:
- Place a large frying pan and a small saucepan on the hob.
- Add rapeseed oil to both.
- Add a small knob of butter to the saucepan.
2- Cook Sausages and Bacon:
- Once the large frying pan is hot, add the Irish pork sausages and streaky bacon.
3- Prepare the Tomatoes:
- Season the vine tomato halves with salt and pepper.
- Place them cut-side down in the large pan with the bacon and sausages.
- Add fresh thyme over the tomatoes.
4- Sauté the Mushrooms:
- In the small saucepan, add sliced chestnut mushrooms with salt, black pepper, and a small knob of butter.
- Stir as they cook, adding a spoonful of water if they start to overcook.
5- Brown the Meats and Caramelize the Tomatoes:
- Brown the sausages evenly by turning them regularly.
- Flip the bacon to reach desired crispiness.
- Turn tomatoes to cook both sides to a caramelized finish.
6- Warm the Puddings and Potato Bread:
- Add black pudding, white pudding, and the diagonally cut potato bread to the pan to be warmed through.
7- Fry the Egg:
- In a separate small frying pan, add butter and a drizzle of oil.
- Once hot, crack the egg into the pan and season with salt.
- Cover with a lid to steam gently until soft-cooked.
8- Drain the Fat:
- Once bacon and sausages are done, transfer them to a plate lined with kitchen paper to drain excess fat.
9- Remove and Plate Other Components:
- Remove cooked tomato, potato bread, and puddings once warmed and crispy.
10- Transfer the Egg:
- Turn off all hobs.
- Carefully transfer the fried egg onto a serving plate.
11- Arrange the Plate:
- Arrange the sausages, bacon, tomatoes, potato bread, and both puddings around the egg.
12- Add Mushrooms and Garnish:
- Spoon sautéed mushrooms onto the plate.
- Garnish with fresh thyme.
