Ingredients
🦞 1 fresh lobster, Irish Atlantic
🦀 200g fresh crab meat, caught the night before
🍚 2 cups jasmine rice, cooked and cooled
🧄 3 cloves garlic, minced
🧅 1 medium onion, finely chopped
🫛 1 cup frozen peas
🥕 1 carrot, diced
🍳 2 large eggs
🧈 2 tablespoons Kerrygold butter
🧂 1 teaspoon sea salt
🧄 1 teaspoon black pepper
🧀 1/2 cup grated Parmesan cheese
🌿 Fresh parsley, for garnish
🍋 1 lemon, cut into wedges
🍶 2 tablespoons soy sauce, Kikkoman
🌽 1 tablespoon vegetable oil, Bertolli
Instructions
1- Prep the Seafood:
- Submerge the lobster in boiling water for 8-10 minutes until cooked. Allow to cool, then split in half and remove the meat. Set aside.
- Ensure the crab meat is free of shells and ready for cooking.
2- Prepare the Fried Rice:
- In a large skillet, heat 1 tablespoon of vegetable oil over medium-high heat.
- Add the minced garlic and chopped onion. Sauté until fragrant and translucent.
- Push the garlic and onion to one side of the skillet and add the eggs. Scramble until fully cooked, then mix together with the garlic and onion.
- Add the rice, peas, and carrots to the skillet. Stir-fry for 3-4 minutes.
- Mix in the crab meat, soy sauce, sea salt, and black pepper. Stir-fry for an additional 2 minutes, ensuring everything is well combined.
3- Grill the Lobster:
