🥕 4-5 medium carrots
🥑 1-2 tablespoons avocado oil
🧄 1/2 teaspoon garlic powder
🧂 1/4 teaspoon salt from a grinder

🌰 1 cup soaked raw cashews
🍛 1-2 tablespoons red curry paste
🥥 1-2 tablespoons coconut aminos
🍋 1-2 tablespoons freshly squeezed lime juice
🧄 1/4 teaspoon garlic powder
🌶️ 1/4 teaspoon red chili flakes or paprika/cayenne blend
🌿 1/4 teaspoon ginger powder
💧 1/4 cup water
🌿 1-2 tablespoons fresh cilantro, chopped
Instructions
1- Prepare Oven and Carrots:
- Preheat your oven to 400-425°F (200-220°C).
- Wash the carrots and trim their ends.
2- Slice Carrots:
- Cut each carrot into 3-4 inch segments.
- Slice each segment lengthwise into thin fry shapes, about 1/4 to 1/2 inch thick.
3- Season Carrots:
- Place the carrot pieces in a large mixing bowl.
- Drizzle the avocado oil over the carrots.
- Sprinkle with garlic powder, salt, and black pepper.
- Use your hands to mix and thoroughly coat the carrots with the oil and seasonings.
4- Bake Carrots:
- Line a baking sheet with parchment paper.
