🍖 Suitable size gammon joint
🍺 500 ml Guinness (Brand: Guinness)
🍃 2 Bay leaves
🍬 Dark brown sugar
🌿 5-6 Whole cloves
🌶️ 5-6 Black peppercorns
Instructions
1- Preheat the Oven:
- Set your NEFF oven to 160°C (320°F).
2- Score the Gammon:
- Place the gammon joint on a chopping board.
- Score the skin in a cross-hatch pattern without cutting too deep.
3- Add Cloves:
- Insert whole cloves into the cross-hatch intersections on the gammon's surface.
4- Pour Guinness:
- In a measuring glass, pour 500 ml of Guinness for basting and braising.
5- Prepare the Roasting Pan:
- Place the gammon in a roasting pan.
- Pour some of the Guinness over it to coat evenly.
6- Create the Glaze:
- Sprinkle a generous amount of dark brown sugar over the gammon.
7- Season with Spices:
- Add bay leaves and peppercorns to the roasting pan.
8- Initial Cooking:
- Cover the roasting pan with foil.
- Place in the preheated oven and cook for 1.5 to 2 hours, basting occasionally.
9- Caramelize the Glaze:
- Remove the foil and increase oven temperature to 180°C (356°F).
- Continue roasting for another 15-20 minutes.
10- Resting:
- Remove the gammon from the oven.
- Let it rest for 15 minutes before slicing.
11- Serve:
- Slice the gammon.
- Garnish with fresh red apple slices and serve with rock salt on the side.
