Ingredients
🍖 Dunnes Stores Simply Better Waldron's Irish Ham size of your choice
🌿 2-3 sprigs fresh thyme
🌱 2-3 sticks of celery, chopped into large chunks
🧅 2 onions, peeled and sliced
🌶️ Approximately 1 tablespoon whole black peppercorns
💧 Water enough to cover the ham in the pot
🍎 Cider used for topping up the cooking liquid
🍯 1 jar Dunnes Stores Simply Better Orange & Honey Ham Glaze Brand: Wexford Preserves
🌸 Whole cloves sufficient quantity to stud the ham
Instructions
1- Prepare the Cooking Liquid:
- On a COOK-branded cutting board, chop the celery into large chunks and slice the onions.
- In a red enamel cast iron Dutch oven, add the chopped celery, sliced onions, thyme sprigs, and black peppercorns.
- Place the Waldron's Irish Ham into the Dutch oven, submerging it in water and add cider if desired.
2- Boil and Simmer the Ham:
- Cover the Dutch oven with its lid.
- Bring the liquid to a boil, then lower the heat to simmer.
- Cook the ham for 25 minutes per 500g, plus an additional 20 minutes.
- Monitor the liquid and add water or cider as needed.
3- Prepare Ham for Glazing:
- Remove the ham from the cooking liquid and place it on a parchment-lined baking tray.
- Using a COOK branded knife, trim any excess fat from the ham.
- Score the surface of the ham in a diamond pattern and stud with whole cloves.
4- Prepare the Glaze:
- Pour the Wexford Preserves Orange & Honey Ham Glaze into a small stainless steel saucepan.
- Warm on low heat, stirring until the glaze is easy to brush.
5- Glaze and Bake the Ham:
- Preheat the oven to 190°C.
- Generously brush the warmed glaze over the ham with a pastry brush.
- Bake in the oven for 20-30 minutes. About halfway through, brush more glaze for a rich finish.
6- Rest and Serve:
- Allow the ham to rest for 10 minutes post-baking.
- Slice and serve with optional garnishes like red currants, orange slices, and fresh thyme for a festive touch.
