Ingredients
Filling:
🍖 900g Shin Beef, chopped, seasoned with salt and pepper, include marrow from bones
🧅 1 large Red Onion, finely chopped
🥕 2 medium Carrots, approximately 200g, grated
🍄 150-200g Mushrooms, sliced
🧄 2-3 cloves Garlic, minced
🥄 1 tsp Mustard
🍅 1 tbsp Tomato Puree
🧂 1.5 tsps Salt
⚫ 0.5 tsp Pepper
🌿 1.5 tbsps Worcester Sauce, Lee & Perrins, or substitute with soy sauce
🌿 1 level tsp each of Dried Thyme, Oregano, Parsley, and Rosemary
🟠 0.5 tsp Sugar
🍺 500ml Guinness Draught Stout
💧 200-300ml Water
⬜ Around 2 tsps Corn Starch mixed with cold water as a slurry
Shortcrust Pastry:
🌾 400g All-Purpose Flour
🧈 200g Butter, cubed
🧂 1 tsp Salt
⚫ 0.5 tsp Pepper
🌿 1 level tsp Dried Thyme
🌿 1 level tsp Oregano
🥄 0.5 tsp Baking Soda
🥚 2 Eggs, beaten
🥛 1-2 tbsps Milk
Glaze:
🥚 2 Egg Yolks
🥛 A splash of Milk
Instructions
1- Prepare Beef:
- Remove meat from shin beef bones, reserving bones and marrow
- Cut beef into bite-sized pieces; season with salt and pepper
2- Sauté Aromatics:
- Heat oil in a large pan on an induction hob
- Sauté the chopped onion until softened
- Add grated carrots and cook for a few more minutes
3- Add Mushrooms:
- Stir in sliced mushrooms
- Cook until they soften
4- Brown Beef:
- Flash-fry beef pieces in a separate pan until browned
5- Combine and Season:
- Add browned beef to the vegetables
- Stir in minced garlic, mustard, tomato puree, salt, pepper, Worcester sauce, dried herbs, and sugar
6- Add Liquids and Bones:
- Pour Guinness and water into the pan
- Add marrow bones
7- Simmer:
- Cover and simmer for 2 to 2.5 hours
- Add more water for extra tenderness if needed
8- Remove Bones and Thicken:
- Take out bones
- Stir in a slurry of corn starch and water, cooking until thickened
9- Cool:
- Let the filling cool completely before assembling the pie
