Instructions
1- Preheat the Oven:
- Preheat your oven to 200°C (392°F).
2- Prepare the Lamb:
- Place the lamb leg in a rectangular, white enamel baking dish.
- Make small incisions on the fatty side of the lamb.
- Insert garlic halves and rosemary into these cuts.
- Drizzle olive oil over the lamb, then season generously with salt and pepper.
3- Initial Roast:
- Roast the lamb in the oven for 15 minutes to develop a crust.
4- Add Potatoes:
- Remove the lamb from the oven, arrange the halved chat potatoes around it.
- Drizzle with additional olive oil and scatter remaining rosemary sprigs over the potatoes.
- Return to the oven for a further 1 hour of roasting.
5- Prepare the Peas:
- In a non-stick pan, bring water to a boil and add the peas.
- Cook until tender, then drain.
- Return peas to the pan, adding butter, mint, and a pinch of salt. Stir until butter melts.
