In this video, Dr. Berg provides a detailed examination concerning agave nectar. Many consider this sweetener to be a healthy alternative due to its low glycemic index and low carbohydrate levels. However, he explains the high fructose content (90% fructose, 10% glucose) in agave nectar is metabolized differently in the body, causing significant strain on the liver. The metabolic process of fructose is comparable to alcohol consumption, leading to potential hazards like fatty liver, insulin resistance, high LDL cholesterol, high triglycerides, and high uric acid that could cause gout.
Comparatively, high fructose corn syrup is comprised of 55% fructose and 45% glucose, seemingly a lesser evil, although Dr. Berg advises against both. He concludes agave nectar isn't a "health food" and encourages avoiding it due to its high sugar content and likelihood to cause liver damage. Despite its place in popular health bars and recipes, it isn't as health-friendly as marketed.
