Instructions
1- Prepare the Macaroni:
- In a large pot, bring 1 liter of water to a boil.
- Add 1 tablespoon salt and 1 teaspoon oil to the boiling water.
- Add the macaroni and stir briefly.
- Cook on high flame for 4-9 minutes, depending on the thickness of the macaroni, until just slightly undercooked.
- Drain and rinse the macaroni with cold water to stop the cooking process.
- If preparing in advance, add a dash of oil to the macaroni to prevent sticking.
2- Make the Sauce:
- In a pan, heat 2 tablespoons of oil and add the butter.
- SautÊ the minced garlic until aromatic.
- Add the chopped onions and cook until translucent, avoiding browning.
- Stir in the minced ginger.
- Add Kashmiri red chili powder and mix well.
- Toss in the chopped tomatoes.
- Add a ladle of starch water saved from the boiled macaroni to the pan.
- Cover and cook on medium flame until the tomatoes are soft and oil separates from the mixture.
- Add the chopped capsicum, carrot, and corn, and cook briefly.
- Stir in the chili sauce, ketchup, and Schezwan sauce, mixing well.
3- Combine and Serve:
- Add the cooked macaroni to the sauce, mixing until the sauce coats the pasta thoroughly.
- Sprinkle with black pepper, oregano seasoning, and garam masala.
- Mix everything together gently.
- Serve hot, optionally garnished with chopped cilantro.
