Sólo se necesita un poco de tiempo, dejar a un lado las carnes y probar algo diferente. Este pastel lo saqué de un viejo libro de mi tierra, me gustó y quise compartirlo con ustedes. Espero que lo hagan y me dejen sus comentarios. Se puede comer como almuerzo o cena, caliente o frío.

* 500 gr de acelgas sin el tallo, sólo las hojas * Un manojo de cebollín * 1 cebolla * 2 dientes de ajo * 1 cucharada de hojas frescas de yerbabuena picadas * 1 ají dulce rojo * 1 pimentón amarillo o rojo * 2 huevos grandes * 300 gr de queso blanco semiduro rallado * 1/2 taza de harina de maíz o de trigo * 1/4 de cucharadita de paprika en polvo picante (opcional) * Sal al gusto * Aceite

* 500 g Swiss chard, stems removed, leaves only * A bunch of spring onions * 1 onion * 2 cloves of garlic * 1 tablespoon chopped fresh mint leaves * 1 sweet red pepper * 1 yellow or red bell pepper * 2 large eggs * 300 g grated semi-hard white cheese * 1/2 cup corn or wheat flour * 1/4 teaspoon hot paprika powder (optional) * Salt to taste * Oil

Lavar muy bien las acelgas, escurrirlas y picarlas en pedacitos. Picar el cebollín en rueditas, la cebolla en cubitos, el ajo, el ají dulce y el pimentón. En una sartén grande poner una tacita de aceite a calentar bien y echar el cebollín, la cebolla, el pimentón y el ajo.

Wash the Swiss chard thoroughly, drain it, and chop it into small pieces. Chop the green onion into small rings, dice the onion, and mince the garlic, sweet pepper, and yellow bell pepper. Heat a small cup of oil in a large frying pan and add the spring onion, onion, bell pepper and garlic.

Dejar sofreír unos minutos, añadir la acelga y revolver un poco a fuego alto por unos 5 minutos.

Sacar del fuego, pasarlo a un bol y dejar enfriar un poco. Batir los huevos y añadirlos, también el queso y la sal (si el queso es muy salado poner menos sal).

Remove from heat, transfer to a bowl, and let cool slightly. Beat the eggs and add them, along with the cheese and salt (if the cheese is very salty, use less salt).

Mezclar bien todo y por último añadir la paprika picante y la harina de maíz. Revolver hasta que todo esté bien integrado.

En un molde poner unas 3-4 cucharadas de aceite, expandir por toda la superficie y vaciar allí la preparación.

Hornear por unos 40 minutos a º180, sacar y dejar enfriar un rato antes de servir.

Bake for about 40 minutes at 180°C, remove and let cool for a while before serving.
