Unfortunately, only Flareon, Vaporeon, and Jolteon are Gen 1. The other ones are not available in Pokémon: Let's Go! Of course there will be future games where the other evolutions will be included.

Yep, Eevee is definitely an amazing Pokemon. Now it can evolve into Umbreon, Sylveon, Espeon, Flareon, Vaporeon, Leafeon, Jolteon, and Glaceon. So many options to choose from! Thanks for sharing your opinion.
