I am your typical American. We absolutely LOVE our foreign mix of eclectic food indulgence. That is the great American way to have all the best foods of the world as our own, most noticeable if you are from New York City. We have all these foods from different countries as part of our normal diet. I for one eat and love Mexican cuisine so much so you would think I actually am! I may not understand much of the lingo, but I sure love their food (to be fair they also happen to love ours, that is, Puerto Rican food—even if they absolutely do not understand us at all for the most part). Pictured is one of my favorite dishes tostadas with ‘refried’ beans, nachos, some salsa, Mexican rice and of course, lots of cheese. These tostadas were kindof’ thick according to the ones I have always eaten which are very thin, but heck who cares they were delicious! Now I need to find around this area a place that can make authentic Mexican breakfast so I don’t have to make them since my knowledge is limited. Have or know any good breakfast recipe you can share? I would love to see it. 🐸
