Are you ready to bake something cute and fun for a party or for someones birthday?
This brings back my childhood memories and I really enjoyed making these along the way.
Ingredients capcake mix
50g Self raising flour
50g Caster sugar
50g Butter or margarine
1 Egg
Frosting
250g unsalted butter
300g icing sugar
2 tsp vanilla
4 tbsp milk
Blue food colouring
Decoration
Dessicated coconut
Maryland cookies
Chocolate chips and white buttons (Milky bar buttons/or any other brands similar)
Method cupcake mix
- Preheat the oven to 180°C | Gas Mark 4
- Beat the butter and sugar until light and fluffy
- Add in the egg, beating it well
- Fold in the flour
- Place paper cases into a muffin tin, pour the mixture in and bake in the over for 10-20 minutes
- Check if the cupcakes are ready by using a toothpick and stick into one of the cupcakes (if it is dry the cupcakes are done)
- Take out and leave to cool on a wire rack
Method frosting
- Mix the unsalted butter, icing sugar and vanilla
- Add in the milk, one tablespoon at a time and stir in well
- Take out 4-5 tablespoons of the mixture and keep in a separate bowl
- Add the blue food colouring to the remaining mixture and stir well
Method on decorating
- Once the cupcakes are cooled, cover them in the blue frosting
- Make the coloured dessicated coconut and add a few drops of food colouring, mix well until the colour is right
- Dip the cupcake into the blue desiccated coconut and cover evenly
- Use the white chocolate buttons to replicate the eyes and chocolate chip for the pupils (you can use the icing to place it securely)
- Use a knife and make a cut for the mouth and wedge in marylands cookie
