Congratulations to for launching your first mini challenge which was announced on your birthday!!! ( how old are your turning now? Lol I can’t keep track after all these years 🤣)
In the morning I made this beautiful fruity granola bowl with fresh almond milk I made at home.
For lunch I made this reddish salad( very simple ingredients: oblige oil, red wine vinegar salt and topped with some crushed pistachio nuts and barley for anther layer of texture); chicken breast with sautéed tomato, onion and olives.
For dinner, the birthday boy was craving chili so I made a whole pot of it!!!! ( it was so popular that the whole pot was gone right the way 🤣 )
We wanted to keep sweets out as much as possible so we didn’t do a birthday cake this time. Instead each one had a ice cream cone to celebrate Wil’s birthday. That was just right amount of sweetness for the week!!
