Let's face it, we always end up fatter in Christmas and it's ok... we have 11 months to get rid of the extra weight... but we never truly get rid of it, right?! Diets are a no go in this season, seriously... who the hell do diet in xmas?! Not me! Not anyone! IT'S IMPOSSIBLE! You don't believe me? Let's see what I ate this week....
I will start with something healthy... cause the rest is definitely not healthy.... AT ALL! Stewed turkey tights with lots of veggies cause I love veggies. Healthy, delicious, pretty... that's all the healthy food you will see in this post...
Quesitos! Puff pastry filled with cream cheese and topped with sugar. Delicious, sugary, divine... makes you fat and diabetic but hey, who's talking about that?! They are easy to make... but this ones were bought, me lazy theses days.
Pasteles! Of course I will keep eating puerto rican pasteles! It will be a sin to not do it! Veggie/tuber dough filled with stewed pork. Pasteles are to die for... and just one have 800 calories so yeah, take it easy with them!
Almond/coconut cream for breakfast! My attempt to eat something "healthy" after eating too much pasteles the day before... This have ginger, cinnamon, coconut milk, almond milk and a bit of corn starch to make it a cream.
Cheesecake! I don't need to explain much in this one... right?! Just saying "cheesecake" should be enough!
Arroz con dulce! Another puerto rican traditional christmas dessert! Its rice made with coconut milk, coconut cream, ginger, cinnamon, sugar, cloves, raisins, and vanilla. Its delicious, easy to make and your tummy will be happy! You make this thing and put it inside the refrigerator and eat it when is cold. BTW, this won't last long cause it taste awesome!
Almond butter snickers!!! Did you noticed this the season for new chocolates and candies?! The candy aisle were filled with new chocolates and this one taste awesome!!
Tembleque! Another traditional puerto rican christmas dessert! Its made with coconut milk, coconut cream, ginger, cinnamon, cloves, sugar, vanilla, almond extract and corn starch. Is basically a coconut "hard" cream. Easy to make and delicious! This one also has to be cold to be eat and like arroz con dulce, it won't last much cause is simple delicious! Last night I made the tembleque and the arroz con dulce.... this morning half of both were gone... and it wasn't me! Next week I will make coquito (puerto rican coconut xmas traditional drink) and will share with you my recipe... and believe me, you will love me for it... and also get drunk because of it!
Oh and I managed to make a decent laze!! I suck big time with handcrafts but after watching some video tutorials in facebook I finally achieved to make a decent laze! What's for dinner in the upcoming weeks? Pork, pasteles, green bean rice, potato salad, arroz con dulce, tembleque, majarete (like tembleque but made with rice flour), coquito, tostones, cake, flan... and only God knows how many other delicious and fattening stuff! I will have to become a fitness maniac to lose all the extra... extra... eeeeeeextra weight I'm packing in!
