Yay TGIF! I am always extra happy when Friday is here because I know the next morning I wake up, I would get tons of cuddles from my three boys. Although right now they would have to be extra careful when hugging me.
Last night I finally could take a proper shower, thank goodness for that! I felt fresh for the first time and could finally wash off the PVP-I, that orangie-reddish disinfectant liquid they apply on you during surgery.
Unfortunately I kinda pulled stretched my arm out somehow, and that affected my incision, it bled a little and made my legs weak when I learned so! So the night became a bit sucky as I could feel throbbing pain! I was hoping so much I won't develop any fever due to it!
Glad I woke up feeling better this morning. I am mobile today so what did I do first? Dishes 😂😂😂😂 I woke up at 5 freaking AM doing dishes!
My husband always offered to get us a small dishwasher and I always said no thanks, I'd rather get Instant Pot, my excuse is that all vegans I know have at least one!!! I can make healthy yogurt and whatnot! 😂😂😂😂 But yeah he's not buying my excuse as I have tons of Crock-Pot, a yogurt maker that is collecting dust (I misplaced a part so I can't use it!) and a rice cooker that is still useable. So no for instant pot. I have been asking for it since last year, meant hubby, hey 😂😂 Anyhoo, I regret to never said yes to dishwasher! Now it's like the perfect time to use it should we have one 😂😂 But of course too late to ask 😅
Hubby is home today so while I did dishes, he food-prepped the whole pumpkins we have still from Halloween. He cubed some and I asked him to store them in ziplock bags per 350 grams each so I would know next time when I need them in cooking or baking.
Some of them he also grated them so we could make tuk fozelek, Hungarian stew pumpkin, in the future. Each bag was also around 350 grams. He learned that using hand grater was crap (as in tiring 😂) so he started using the mixer with grater attachment, smart guy 😂
I am sure he regrets staying home now though. So far only 3 pumpkins done, we have 3 giant ones still, to go!😂😂
We prepared roasted pumpkin chili earlier with some of the cubed pumpkins and here is the recipe if you'd like to try. It is soooo good and so simple to make especially if you are using Instant Pot....errr I mean Crock-Pot! 😂😂
We cooked with stove top though 😊 Sorry no step-by-step pics, the cook is still not too healthy yet to stand that long in the kitchen 😊
Ingredients
- 200-300 g cubed pumpkins, roasted in preheated 400 F for 30 mins
- 2 tomatoes, roasted (see below)
- 1/2 of medium size red onion, sliced
- 3 garlic, crushed
- 1-2 tbsp olive oil
- 2 tsp cumin seeds
- 1/2-3/4 tsp cinnamon powder
- 1/4-1/2 tsp cayenne powder
-1 tsp dried oregano - Freshly grated nutmeg (1/2-3/4 tsp)
- 1 tbsp BBQ sauce
- 1 tin tomato paste
- 3 tins water (using tomato paste tin)
-1 can sweet corn, drained - 1 can black beans, drained
- 1 can peas, drained
- Vegeta powder, 1/2 tbsp or to taste
- 1/2-1 tsp liquid smoke
How To
- Once pumpkin roasted, place two tomatoes on the same sheet, turn off oven and leave pumpkin and tomatoes as is, until oven totally cooled
- Once cooled, roughly chop pumpkin and tomatoes
- Heat oil and saute onion and garlic along with spices
- Stir in peas corn beans
- Add in tomato paste and water
- Stir in BBQ sauce, liquid smoke, and season
- Adjust flavor to your liking
