As a general rule, coconut flour sucks 4 times more fluids than almond flour. So if you want to replace almond flour with coconut flour in any recipe, you need to use 4 times less coconut flour. The result won't be the same no matter what, as coconut flour is more "chewy" and soft, but it can be good nonetheless.
Mind you, this recipe uses neither of the two, it has just Psyllium Husks instead. The creator claims you alternatively use Fiber Mix instead of Psyllium, and in the Greek version of the blog-post also mentions you can also use Flaxseed meal. It is suggested that a mix of 50% Fiber mix and 50% Flaxseed meal might be ideal for this recipe.
