Hello guys, Schizophrenis here! It's been a while since my last post. It's nice coming back for more.
These past few months, I have been following a Ketogenic diet. My physical and mental health have improved a great deal since I started, and it's something I would at least in part attribute to the diet. It's not an easy diet to follow, and due to the dietary restrictions, it can be a pain in the ass- being deprived of all those glorious high-carb foods we hate to love.
One of the things we Keto-enthusiasts frequently miss is the simplicity and deliciousness of a regular sandwich. Stuff some cheese and ham in-between two slices of bread, grill it a little bit, and dig in.
I personally have tried making many different bread recipes, both custom and stuff I have found on the internet. To be honest, everything up to this far was underwhelming. But recently I stumbled upon a relatively unheard recipe among the Keto community; Mika’s bread. And what a bread it is!

I have to tell you guys, the taste is amazing. It's soft, fluffy, tastes light, and does not taste eggy for a 10 egg recipe at all.

I tried making two sandwiches earlier, just sprinkled some cheddar on 4 slices and topped one with ham, the other with chicken, then toasted them for a minute or two.
I am excited and satisfied by the result. It's nice to be able to just patch up and eat a sandwich like a normal person once in a while. Only this bread is more nutritious and healthier than regular store-bought bread. So, if you are looking for a bread alternative for your high fat diet, please try this, you won't be disappointed. Just make sure to cook it well enough so it dries up enough and loses its moisture excess.
