On a typical Saturday morning, breakfast usually happens closer to noon. We take our time waking up. Drinking coffee or tea (depending on individual preference) and slowly easing into the day. Sometime after 10am is typically when we'll begin thinking about breakfast. Although there are days, we go straight to lunch.
My oldest son was still asleep. My youngest son was in the kitchen at the same time I was. So, I asked, "Are we thinking breakfast or lunch?" He said, "I'm going to make a ham sandwich," and I pondered for a moment whether that sounded appealing to me or not. Turns out it did not. Breakfast it is!
Now to decided what I wanted to eat for breakfast. Eggs are a given, but what would accompany those eggs? I didn't want to spend a lot of time in the kitchen. It's Saturday, after all. Luckily we had some potatoes I could fry up. Potatoes and eggs with a flour tortilla and coffee. Yep, that sounded perfect.
Then I heard the door knock. It was my mother who was stopping by for a visit. However, you know moms. They always bring something good with them. In this case, it was chopped brisket, pork tamales, and avocados. It looks like my simple breakfast just became a hearty breakfast. No complaints. I love a good brisket breakfast. The tamales were an extra nice bonus.
The meal was enough to wake my oldest son from his slumber, and shift my youngest son from a ham sandwich to a brisket sandwich. The photo does not do this delicious meal justice. Take my word that it was a breakfast fit for a king. 👑
Ya gotta love it when mom comes to visit and brings a hearty and tasty feast. She totally ROCKS!
