Come on guys! I'm going to explain every steps how to make a perfect chewy fudgy and moist brownies. I have been tweaked this recipe for over ten time. Let's get right to it.

Bake 25 mins
Total 40 mins
Ingredients:
100 g. All-purpose flour
1/4 teaspoon salt
30 g. unsweetened cocoa powder
100 g. dark chocolate (chopped)
85 g. unsalted butter
200 g. granulated sugar
2 eggs, at room temperature
2 teaspoons vanilla extract
1/4 teaspoon Baking powder
1 teaspoon instant espresso powder (option)
Oreo for Toping (option)
Instructions:
- Preheat the oven to 350 degrees F (175 celsius). Butter the sides and bottom of a 8x8 inch baking pan. Line the pan with parchment paper.
- In a medium bowl, whisk the flour, salt, and Baking powder together.
- Put the chocolate, butter, instant espresso powder and cocoa powder in a medium bowl and set it microwave oven for 2 minute until the chocolate and butter are completely melted and smooth and look very glossy.
- Add eggs, sugar, salt and vanilla together in another large bowl then whisk until the mixture turn light-yellow (for thick fluffy brownies whisk for 3 minutes)
- Pore the chocolate mixture into the egg bowl. Mix them together
- Sprinkle the flour mixture from step 2 into the bowl. Gently mix them together. Pore the batter in to pan. Bake in the oven for 20 - 25 minutes.
Key to success:
*For chewy Fudgy Brownies use hand whisk not electric whisk
*Use 50% dark chocolate if you don't like sweet brownies
