Here are the short steps to make a delicious and spicy chicken chilli:
1. Marinate the Chicken
Cut boneless chicken into bite-sized pieces.
Mix with 1 tablespoon soy sauce, 1 tablespoon vinegar, a pinch of black pepper, and 2 tablespoons of cornstarch.
Let it rest for 15-20 minutes.
2. Fry the Chicken
Heat oil in a pan over medium-high heat.
Fry the marinated chicken pieces until they are golden brown, crispy, and cooked through.
Remove the chicken and set it aside on a paper towel.
3. Saute the Aromatics and Veggies
In a wok or large pan, heat a little oil on high.
Add finely chopped garlic, ginger, and slit green chilies. Saute for 30 seconds.
Toss in cubed onions and bell peppers. Stir-fry for 2-3 minutes so they stay crunchy.
4. Make the Spicy Sauce
Lower the heat slightly and add 2 tablespoons soy sauce, 2 tablespoons chili sauce, 1 tablespoon tomato ketchup, and a splash of vinegar.
Stir well to combine.
5. Toss and Serve
Add the crispy fried chicken back into the pan.
Toss everything together until the chicken and vegetables are fully coated in the glossy sauce.
Garnish with freshly chopped spring onions and serve hot!
