I friends, I was up early this morning to bake some festive treats so thought I would share them with you before I settle in for a day of unashamed binge eating and merriment!
Mince pies might not be known to those from outside of the UK, so for those who are not familiar they are a pastry based sweet dish filled with a mixture of dried fruits and spices (no meat!) and are traditionally served over the Christmas period.
The version I made is a little 'twist' on the traditional style, a little lighter and with less filling so perhaps a good option for those not sure about the whole 'mince meat' thing π
Although a typically English dish, mince meat is widely available pre-made and can be ordered online so why not give it a go?
It's so so easy to make with only a few minutes prep and 30 minutes baking time.
Here's what you'll need:
- Pre-made puff pastry sheet
- 1 jar Christmas mince meat
- 1 tbsp any vegan butter
- 1 tsp cinnamon
- 1 Tbsp brown sugar
Method:
Preheat your oven to about 190c/ 375F.
Unroll the pasty sheet and leave at room temperature for 10 minutes.
- Spread a thin layer of butter over the whole sheet.
Sprinkle with sugar and cinnamon.
Spread the whole jar of mince meat evenly over the entire pastry sheet.
- Roll the sheet up as tightly as you can.
Cut to your desired thickness (I made 12).
Place on some parchment paper on an oven tray.
- Bake for 20 minutes, until golden brown.
Remove and turn over.
Bake for another 10 minutes.
Remove from oven and leave to cool (if you can wait that long!)
- Enjoy!
