The fish heads come from fish weigh over 5 pounds so the head itself can be cooked as one dish. One way is to make a fish chowder: add fish, unions, rice wine and hot water to a fish boil.
上周末朋友送了几条大鱼,大到光是鱼头就可以单独做一道菜。鱼汤是最容易做的——油煎过以后加足够滚水然后大火烧到汤发白为止。加一点酒酿和枸杞汤会很清甜,还带着点冬季滋补的概念。
Fish steam takes a little more effort: it is tricky to divide the head into perfect halves. Steam with rice wine, unions and chilli peppers.
蒸鱼头其实是借鉴了爆腌黄鱼的做法。鱼头对半刨开,如果要刨的漂亮均匀需要点技巧。蒸之前抹盐腌制半天,再加黄酒辣椒酱蒸熟。
