I am sharing you one of my favorite breakfast meal, Tortang Talong or Eggplant Omelette in English.
Tortang Talong is a traditional Filipino omelette, basically composed of eggplant and eggs. A popular breakfast here in the Philippines and also for lunch and dinner.
This is very simple to prepare, first we need to grill the eggplant until tender and peel off the skin specially the burned part. Grilling the eggplant gives an extra boost of flavor and aroma on the dish. But you can also steam or boil the whole eggplant and remove the skin, if you don’t prefer the grilling process.
Then, we need to dip the eggplant in the beaten eggs with salt and pepper. And mash the eggplant a bit. For these three eggplants, I used 2 large eggs.
In a hot pan with estimated amount of oil for about 2 tablespoon, simply fry both side like the photos about. And there you have it!
It is best with banana or tomato catsup. For my breakfast I paired it with corn rice and a hot black coffee. Yum! 😋😋
