Who doesn't love homemade cookies?! These snickerdoodles are warm, soft, sweet, and everything you could ever want in a dessert. Enjoy!
Ingredients
1/2 teaspoon cream of tartar
1 teaspoon baking powder
1/2 cup coconut oil
2 cups unbleached all-purpose flour
3/4 cup sugar
1/2 cup almond milk
1/3 cup mixture of cinnamon and sugar
1 teaspoon vanilla extract
1 pinch of salt
Preheat oven to 350 degrees.
Combine cream of tartar, baking powder, flour, and softened coconut oil in a bowl. Add the sugar, salt, vanilla extract, and almond milk. Your mixture should be soft and sticky, not crumbly.
Form 1-2 inch balls of dough, and roll them in the mixture of cinnamon and sugar until they are completely covered.
Place the balls on a cookie sheet with parchment paper to prevent sticking, and be sure to flatten the cookies before putting them in the oven. Bake for 10 minutes, cool, and enjoy!
