VEGETARIAN FAJITAS WITH GUACAMOLE
Ingredients
- 1 red pepper
- 2 cloves of garlic
- 1 green pepper
- 1 onion
- 1 zucchini
- 300g of crushed tomato
- chopped cilantro
- chile or cayenne powder
- 8 mexican tortillas
- 1 lemon
- salt and pepper
- homemade guacamole
Preparation
1.- In a large pan, put a little oil to heat over a low heat. We add the garlic cloves well chopped and let cook here a couple of minutes. That do not catch color
2.- After this time, add the green peppers and onion cut into thin strips. Season and let cook for 5 minutes, at moderate heat, pulling hard. That is, to a fire that is not too soft.
3.- After this time add the zucchini also peeled and cut into strips. Mix with the rest of the ingredients and continue cooking for 5 more minutes.
4.- After this time, add the chili or cayenne powder. This ingredient is optional, as well as the amount you want to put. We also add the crushed tomato and mix. We let cook another 5 minutes more.
