One weekend last year I was wondering through my farmers market looking for some greens. Strangely, none of the vendors had any greens. Fortunately, one farmer mentioned that he had beets with the green still on them. All I really wanted was some greens so the beets were a bonus. For the price, I can't complain. I've just been wilting them in olive oil or butter with a little bit of salt and pepper. I had some tonight, and again, I was really happy with the result.
