So this dish happened kind of by accident. It's not a "you got your chocolate in my peanut butter" thing considering that most carrot cakes have a cream cheese frosting but the decadence is impressive. I have been making Carrot Cake for many years but not with the Cheese Cake center. I really love carrot cake but only make it occasionally because my recipe is a daunting task. Someone asked me why I don't use an easier recipe and its kind of like once you've had the best why would you go back to less than that. Anyway on the day that I was making this, one of the other cooks was making cheesecake. Well, she forgot to put the graham crust under the cheesecake. So what could have been a real Grrr moment, turned sublime. So a mistake turned into great timing for this masterpiece. The combination of the two takes great to extraordinary.

I took a lot of pictures because I was actually really impressed with this. I think the combination of walnuts, raisins, coconut and pineapple really make the carrot cake special. And of course the five plus cups of sugar to only two cups of flour and two cups of carrot turn it into more of a candy than a cake. But its dessert right.
