As I got older my pallet for spicy food expanded to a different level. I remember growing up in Jamaica my father used to eat Scotch Bonnet Pepper straight from the tree. We had a pepper tree right in the front yard. He used to bite straight into the pepper, I was so fascinated. What I didn't realize was how hot those peppers were. They were so bright and colorful and seemed so innocent looking, definitely not the case. Looks can definently be deceiving smh. Those familiar with Jamaica know that we have cherries that look similar to the peppers. Pretty much the same colors as well.
My father always warned me not to touch the peppers from the tree. Seeing him eating the peppers daily at the dinner table, as an inquisitive youth I wanted to try it out. So one day big and bold I picked a pepper and brought it to the dinner table. I don't remember if he saw me with the pepper, I'm sure he did though. What I do remember was biting into the pepper and my mouth being on fire 🔥🔥. A ball (cry) mih start ball after that. I could feel that burning in my mouth right now as I'm writing this. My father wanted to beat me for not listening, but my mother said to leave me alone. The pepper burning my mouth was punishment enuff. She gave me some brown sugar to soothe my mouth.
I think that incident traumatized me for spicy foods for years.Now a days I have no problems eating the spicy stuff, especially jerk. So on Easter Sunday I decided to make my own jerk seasoning. I typically buy the Walkerswood or Blue Mountain brand. Those are ok, but mih did want try a ting. I found a recipe online a dove right in.
I bought a nice 9 lb pork shoulder to jerk for Easter dinner. After making the jerk seasoning in my food processor I rubbed it into the pork. After covering the pork generously with the seasoning I wrapped it in plastic and put it in fridge overnight.
Sorry I didn't take any pictures of the finished product. I was to anxious to eat. I also made some fresh carrot juice mixed with Guinness, and condensed milk to go with the meal. I must say my family definitely enjoyed Easter dinner.
