Today I will share with you a delicious ramen recipe, which is a culinary experience originally from Japan, the first time I tried this dish I was delighted and I told myself that I had to learn how to prepare it to surprise my family, and I tell you that as soon as they ate the one I made they fell in love with this Japanese food. In my version I have chosen a broth that combines the richness of pork and the softness of chicken, I faithfully believe that the secret of this dish is in the preparation of its broth. The magic of ramen lies in its ability to be customized, this goes from the broth, the choice of noodles whether thick or thin, rice or wheat, to the topping that each person uses to add a unique flavor. This time I have also incorporated sweet and savory ingredients that create a harmony of flavors on the palate. Below I will give you the ingredients and how to prepare them.

Hoy compartiré con ustedes una deliciosa receta de ramen, que es una experiencia culinaria originaria de Japón, la primera vez que probé este platillo quedé encantada y me dije que tenía que aprender a prepararlo para sorprender a mi familia, y les cuento que en cuanto comieron el que les hice se enamoraron de esta comida japonesa. En mi versión he elegido un caldo que combina la riqueza del cerdo y la suavidad del pollo, creo fielmente que el secreto de este plato está en la preparación de su caldo. La magia del ramen reside en su capacidad de ser personalizado, esto va desde el caldo, la elección de los fideos ya sean gruesos o finos, de arroz o de trigo, hasta el topping que cada persona utiliza para añadir un sabor único. En esta ocasión también he incorporado ingredientes dulces y salados que crean una armonía de sabores en el paladar. A continuación les daré los ingredientes y cómo prepararlos.

Primero para preparar el caldo, puse a hervír la parte de de cerdo con su hueso, y los muslos de pollo, el ajo, jengibre picado en rodajas reservando solo un poco del jengibre, agregué los dientes de ajo, sal al gusto y la cebolla picada en partes grandes, y parte del puerro reservando la parte verde para el emplatado, ahora vierte agua hasta que cubra las carnes cocinar a fuego moderado. "Puedes usar cualquier parte del cerdo (costillas, chuletas panceta, etc)"

I let the broth cook for 2.5 hours, removed the foam that was made during boiling and added more water making sure it had a good salt taste. I also added 30 ml of soshu sauce.

Dejé cocer el caldo durante 2 horas y media, quité la espuma que se hizo durante la ebullición y añadí más agua asegurándome de que tenía un buen gusto de sal. También añadí 30 ml de salsa soshu.

Meanwhile I started to cook the noodles, putting 500 ml of water with salt to taste in a pot on the fire, when it boils add the noodles and cook for 7 minutes.

Mientras tanto empecé a cocer los fideos, poniendo 500 ml de agua con sal al gusto en un cazo al fuego, cuando hierve añadimos los fideos y cocemos durante 7 minutos.

De la misma manera, coloca una olla con agua a hervir y coloca los 4 huevos y déjalos cocer durante 6 minutos. Retíralos y colócalos en agua con hielo para descascar posteriormente

Ahora se prepara una salsa añadiendo el resto de la salsa soshu, azúcar, mirin, sake, un diente de ajo picado y dos rodajas de jengibre. Cuando rompa a a hervir apagar y ponga los huevos sin cáscara en esta parte de la salsa para que se marinen.

Al final, sólo tenemos que emplatar nuestro ramen, añadiendo un poco de la salsa que preparamos, luego el fideo en el centro, luego añadimos el caldo, seguido del jamón laminado, el huevo escalfado picado por la mitad, el puerro un lado, un poco de cebollin picado y espolvoreamos con semillas de sésamo.
