Pancit is a noodle dish, we Filipinos love. Philippines is an archipelago with 7, 107 islands and almost each of the major provinces has their best version of pancit. Traditionally, we believe all birthday parties should have pancit to wish the celebrant a healthy and long life. Pancit Palabok is one of my favorite versions of Pancit. This is originally made in the Luzon area or the Northern part of the country.
Pancit Palabok has a rich, thick, pasty sauce and it is topped with ground pork rinds and some hard boiled eggs. It's also garnished with steamed shrimps and chopped raw green onions. I have the same love for Pancit Palabok as Spaghetti!
