Ingredients
200 g Strawberries
200g Sugar
100 g cooking chocolate
6 egg whites
2 dl cream
4 tablespoons (soup) sugar
3 tablespoons (soup) cocoa powder
2 teaspoons (tsp) cornstarch flour
1 teaspoon (tsp) white wine vinegar
1 tablespoon (soup) balsamic vinegar
1/2 tablespoon (coffee) fine salt
1 pinch cinnamon
Butter for greasing
Vegetable paper
Method of Preparation
1-Turn the oven to 170 degrees. Grease a sheet of parchment paper with butter and arrange on a tray. In a bowl mix the cocoa with cornstarch, cinnamon, fine salt and chopped dark chocolate. Beat the egg whites on low speed, add the vinegar and increase the speed until stiff. Join spoonfuls of sugar gradually and continue beating until well beaten. Add the cocoa mixture and wrap carefully.
2-Arrange the meringue on the board, circle-shaped, leaving the slightly higher end, to create an interior basis for filling and bake about 1 hour 15 minutes. Remove and let cool.
3-Arrange strawberries, cut them into quarters and place in a bowl. Add two tablespoons (soup) of sugar and balsamic vinegar and mix well. Marinate. Beat the cream into whipped cream with the remaining 2 (tablespoons) of sugar, providing for the pavlova and decorate with strawberries.
