I am still playing with the lemonchilli marmalade. Last night, we had fish (hake - it's generally bland, so needs something to pep it up). I stir fried some robot peppers with ginger and then added about a dessert spoonful of the lemonchilli marmalade and seasoned.
The fish was pan fried in the same pan as the vegetables in a combination of butter and olive oil. I seasoned it with lemon, salt and pepper and a dusting of flour.
Served with whole green beans and potatoes for The Husband.
Finally, I sprinkled a generous amount of perennial basil over the peppers piled on the fish.
The verdict: it worked. I will make that combination again and better note the quantities.
