Last night's meatfree Monday was all about flavour combinations. The first with the Lemonchilli marmalade I made on Sunday.
I had also not properly planned supper (except for the remains of the ratatouille quiche), and wanted to try something.
This is what I did: roasted sweet potato with cumin, daikon (some of my bartered loot) with slivered almonds and some rosemary leaves. I par boiled and steamed some broccoli (leaving the stalks long). All served with a blue cheese and lemonchilli marmalade.
Guess what?
It worked!
The chilli flavour infuses the marmalade beautifully and when you hit either skin or a seed, there is an extra pop of flavour.
Now to try it with other things, like cheese, fish, chicken, etc., and get feedback from my peeps.
Be warned: lemonchilli marmalade spam forthcoming.
PS for my vegan friends, either lose the cheese or substitute with a sharp, salty vegan alternative.
