Since it's the weekend, let's once again go non-technical...
Over the past couple of weeks, I tried many iterations of ketogenic friendly pizza. One with fluffy crust, another with psyllium husk and almond flour, another with almond flour and thin crust, another whey-based crust. And here, I'm presenting the recipe for the one with crust made of flaxseed flour.
What is flaxseed flour? It's basically finely ground flax, that has been defatted (it had its fat removed).
The options for ultra low carbohydrate pizza are basically endless. I've just tried a few. And to be honest, all of the them taste much better than the conventional high-carbohydrate wheat pizza. They are more dense and the texture is richer.
For the flaxseed flour pizza, I've chosen the following ingredients for the crust:
- 60g flaxseed flour
- 4g baking powder
- 1 whole egg
- 150ml water
And for the toppings:
- 30g tomato sauce
- 40g green olives
- 40g sausage/salami
- 20g cheese
The crust was somewhat thicker, which makes me think of reducing the flaxseed flour to half when I do this recipe the next time. It's gonna be even lower in carbohydrates. But, I'm not really sure if this matters because most of the flaxseed flour is fiber either way.
