Sinigang sa Kalamansi na Maya-Maya is one of the dishes i learned from my Mother-in-law. This dish is memorable to me because as i remember way back 2015 i was almost 3 months pregnant she cooked this one then i felt my eldest daughter's first little kick (it's actually a heartbeat). Maybe she also enjoyed the food i ate.

Cooking Time: 10 minutes
Serving Size: 4 persons
Ingredients:
-4 slices of Maya-Maya (0.5kg)
-7 cups of water
-1 medium size onion
-1 big tomato
-2 tie of spinach
-10-13pcs calamansi
-1 siling pansigang
-salt to taste
Procedure:
1.Prepare the ingredients. Wash the Maya-Maya and rub some salt.
- Wash the tomato then cut into pieces.
- Peel the onion and slice
- Wash the spinach, cut off leaves from stalks. Set aside leaves.
- Wash the calamansi, cut into halves. In a small bowl add a small amount of water, squeeze it and remove the seeds.
- In a pot, pour the water. Add the onion, tomato and salt. Turn the heat to high and let it boil.
- When it is already boiling, add siling pansigang and the fish. Cook for 1 minute.
- Add spinach and simmer for 2 minutes (do not over cook the spinach)
- Now, add the calamansi juice and simmer again for a minute. Taste it. Add salt if needed.
- Serve hot and enjoy eating it with steamed rice!
