Ingredients:
Chocolate Sponge Cake Layer:

125 gr of unsalted butter
125 gr caster sugar,
100 gr plain flour
25 gr of cocoa powder
1/2 tbsp baking powder
1 tbsp vanilla extract
White Chocolate Mousse 20 cm
150 grams of white chocolate + 100 ml of heavy/double cream
200 ml of Heavy/Double cream (minimum 30% fat)
1 Gelatin sheet OR 2 grams
Light chocolate mousse 18 cm
150 grams of milk chocolate
300 ml of Heavy/Double cream (minimum 30% fat)
1 Gelatin sheet OR 2 grams

1 egg yolk
30 gr of Sugar
Dark chocolate mousse
150 grams of dark 70 % chocolate
300 ml of Heavy/Double cream (minimum 30% fat)
