Sounds like everything but the kitchen sink lol! But I had an overripe banana and I was going to make peach muffins so I threw it in. The peach truck came by a town near us and so I had to go snag a 25 pound box of peaches! Peaches everything and freezing peaches! Yay!
Recipe:
Wet ingredients
1 cup milk
2 eggs
1 tsp vanillla
1/4 cup oil or applesauce
Dry ingredients
2 cups flour
3/4 cup cane sugar or honey or sweetener of choice
1 tsp baking powder
1 tsp cinnamon
1 tsp nutmeg
1 cup old fashioned oats
1 tsp sea salt
In separate bowls combine each set of ingredients. Then mix together, but not too much :) Fold in your peaches (3 large peaches)
Bake on 350F for 15 minutes. Yields 18 muffins
