Saint Patrick's Day 2019 has passed. That's alright. Irish food is always good every day of the year! I really like these potato cakes. They are traditionally served in Ireland as part of the Irish breakfast fry typically served with sausage, bacon, eggs, tomatoes, and fried mushrooms. It's very cheap and easy to make. Flipping it over is the hardest part. I used left over yukon mashed potatoes from my last video to make this cake.
INGREDIENTS
1 cup of mashed potatoes
1 cup of grated, raw potato
2 teaspoons of baking powder
1 cup of all purpose flour
2 tablespoons of salt
3 tablespoons of butter
2 large eggs
1/4 cup of whole milk
DIRECTIONS
Mix baking powder, flour, and salt in a small mixing bowl.
Add the mashed and grated potatoes in a small mixing bowl, and whisk in the eggs.
Add eggs, flour, and milk to the large bowl and whisk well.
Slowly pour the batter into a deep dish pan and fry for about 5 minutes over medium high heat.
Cut into 4 triangles.
Eat!
