Preparation: toast 3 slices of spelt bread with butter. Crush 100 g. of avocado with lemon juice and lime and cilantro. Add 10 g. of olive oil until obtaining an emulsion. Season with salt and pepper. Mix 50 g. of mayonnaise with a crushed chipotle pepper. Make onion rings by battering them in chickpea flour. For the yolk sauce: mix a yolk with jang (fermented Korean soybeans) and chives. Cut 150 g. of tomato and 5 g. of pickled gherkins into very thin slices. Spread one of the slices of bread with the avocado cream, add a large leaf of oak lettuce and the egg yolk sauce. Put 40 g. of thin slices of turkey cold meat and cover with tomato, gherkin and onion rings. Repeat on another slice and mount one on top of the other. Cover with the third slice of bread.
Not too many calories: 1. 474 kcal... Angela Quintas, biochemist and nutrition expert, explains: "Its ingredients are not high calorie dense and are found in small amounts. But fat values are quite high, and this is due to the presence of ingredients that provide higher lipid content such as butter, mayonnaise, avocado and egg yolk. In addition, with the exception of turkey and egg yolk, it does not have large protein sources of high biological value. Skip the butter, choose whole grain bread and use olive oil to fry the onion".
