Normally I'd say this is a standard shot, were this to be a few months ago. Now it seems like all we do is stare out the window wondering when life will feel normal again. This was about the max excitement the kids saw today, besides the usual dog walkers and lost drivers whipping U'ies in the cul-de-sac.
My excitement was on hold. It wouldn't be until 3'ish when I could start on our late lunch early dinner.
Marinated garlic and butter chicken breast for the wife and a big ole thick rib eye for myself. Add a side of mashed potatoes and brussel sprouts with onion and you've got the making of my last meal.
Let's get after it.
I started these on the grill first to try and get a nice crust on them. My secret ingredient when it comes to brussel sprouts is, get this.....honey! It's absolutely delicious. Nice little trick my buddy Denver Dan taught me and now it's my go-to. Not so secret anymore now though, you're welcome ;)
However, after covering them with tinfoil to finish cooking, they weren't as crisp as I had hoped. So I fired up the gas stove and tossed em' around in some more olive oil and honey on fairly high heat. It seemed to do the trick.

I was able to get some really nice grill marks on the chicken breast and some decent ones on my steak. As long as my rib eye came out medium rare I was going to be happy.
I had some company with me to help pass the time. He's quite the handful, always wanting to get into everything. You turn your back on him and he disappears like David Copperfield. But I did my best to keep him wrangled in.
I went with my classic mashed potatoes. Skins left on, nice big slab of butter, salt and pep to taste, splash of milk, and pinch of garlic and boom you've got some nice tasty mashed potatoes. Easy peasy lemon squeazy.
And I wasn't joking about this being my last meal. I guess maybe I'd sub out asparagus for the sprouts, or another veg...but steak and potatoes are my #1 and #2 staples. Hopefully my time on this earth never leads to a time and place where I have to actually request my last meal, but it's worth considering for fun anyway.
