So you haven’t heard of this so called
Food Fight Friday
Here we have some BBQ chicken with garlic roasted potatoes and some steamed carrots and cauliflower
I prefer to use boneless skinless chicken thighs, they tend not to dry out like chicken breasts do.
Trim the little fat nuggets off and toss them in a zip-lock bag. Then add your favorite BBQ sauce.
Add enough BBQ sauce into the zip-lock to ensure good coverage on the chicken.
Since this was a last minute idea for dinner, I only marinated the chicken for an hour or so. Normally I do the marinating the night before.
Then use the left over BBQ sauce in the jar to paint on the chicken while it is cooking.
While the chicken is marinating let’s get goin on the garlic roasted potatoes.
Mama Splatts put these together so fast I couldn’t even snap any photos of the process. I’m goin to have to have a little talk with her about this inappropriate behavior 😜😜
5-6 red potatoes
1/2 an onion finely chopped
A couple cloves of garlic finely chopped
Rosemary, Parsley, salt, and pepper to taste.
Cut the potatoes into 1 inch cubes and place into a 9x13 glass oven safe dish
Sprinkle the garlic and onions over the top and heat the oven to 400 F.
After cooking at 400 F for 15 minutes stir and continue for another 15 minutes.
Fire up that grill!!
I’m sending smoke signals to the neighbors, with my Green Mountain Pellet Grill. The aroma of BBQ will slowly drift through the neighborhood and make everyone hungry. Muahahaha
I set my grill at 400 F and wait for it to reach the temp.
Once it is up to temp, slop those chicken thighs on the grill. There are a couple breast pieces in there, because I grabbed the last couple packs of thighs and wanted some left overs for a BBQ chicken salad the next day for lunch.
Now get your jar of BBQ sauce and with a brush paint some BBQ sauce on them and close the lid. Cook the chicken for about 10 min then flip them over. If you notice any uneven cooking rearrange them and slop some more BBQ sauce of them.
Continue to cook for another 15min or until the chicken is done.
Check those potatoes, they should be tender, and slightly dark around the edges when they are done.
Now onto the veggies
Mama Splatts got me again!!
While I was taking care of the chicken, she peeled and cut carrots and washed and cut the cauliflower. Dang she was on top of things this night.
This is what we use to steam our veggies. Sometimes we place them in a bigger pan with a little water in the bottom and kind of boil/steam them. So if you don’t have a steamer you can do that.
The chicken is done and looks dang tasty🤤🤤
When the veggies are tender and a fork easily penetrates them, they are done.
Now we feast.
Even at the last minute a good healthy meal can whipped up.
