Yo, hey guys!
You didn’t think we’d miss did ya?
and I are posting this entry together. Before you start sniveling let me explain a bit… this week we got some really terrible news and it’s been pretty rough. Tomorrow, we celebrate the life of a very good friend of ours, and I spent all day cooking/baking in preparation. We love our Food Fight Fam and didn’t want to let anyone down so here is our entry: (

Around 9:30 this morning I decided to get a jump on things and began baking Chocolate Pumpkin Brownies. (Of course they’re gluten free, dairy free, processed sugar free. Did you really need to ask?)
Then I washed out my glass dish and did another batch but this time using coconut as decoration…
Both batches are double batches and all together (after gave them the ole taste test) yielded exactly 60 brownies. That’s a lot for this little kitchen.
Then I immediately began mixing up a quick chocolate chip pumpkin bread…
The tin goes with us tomorrow while the glass dish stays here for Dandays to enjoy 😉
I looked up and it was already 1:30, I wasn’t showered yet, and we hadn’t eaten anything all day. So, I made two bowls of rolled oats… helped with this one…
It’s rolled oats, almond milk, Dandays chopped a gala apple (a whatta whatta Apple?), cinnamon, pumpkin spice, chia seeds, almond butter, coconut shavings, cacao nibs, and a tea spoon of maca powder. Yum-me 😋 Oh yea, and Dandays tossed in some extra almonds for a good crunch.
This should get me through to the next meal…
Now, was time to get started on that big tray of Cilantro Lime Cauli-Rice. It took me 3 different batches to finally say “that looks like enough”.
These are the trays I filled. You can see it takes up two stove burners right? They actually hold much more than I anticipated.
It’s made with red onion, garlic, limes, jalapeños, cilantro, zucchini, cumin, and sea salt. Dandays, was the cilantro de-stemmer. It’s a tedious job and he dominated that cilantro so let’s give him a brief moment of appreciation……………………….
Can you guess what we had for dinner?
Yep rutabaga fries! (Who was gonna guess cilantro lime cauliflower-rice?)
I actually heated Dandays up a tamale, which I stand photoless for, and black beans while I made a spring mix salad with a scoop of cauli-rice, guacamole made from 1/2 an avocado, cucumbers and apple cider vinegar. The rutabaga fries were served on the side of both our dishes.
Once all was said and done both Dandays and I were beat. We love our food fighting crew and wanted to still jump in the ring and give our support. Thank you for not making a big deal out of our fused entry. Y’all rock!
