<center<Hello dear community, here I am to share a nutritious dish, easy to make and very healthy for our health. This dish is made with eggplant.
The eggplant is an edible fruit with many seeds very healthy.
It is a food low in calories and carbohydrates. It can have many shapes and colors, but the most abundant is the purple and pear-shaped. Its meat is exquisite, it is consumed as a vegetable, fried, breaded or sliced.
In this opportunity I show you in a delicious filling with vegetables.
For this we need (for four people)
4 eggplants
1 zucchini
1 onion
4 peppers in strips
2 tomatoes
Olive oil, salt and pepper
8 tablespoons grated cheese
Oregano or basil
Bread crumbs
To develop first we need to cut the aubergines, clean them well, remove the corner, but leave them with your skin. We must cut it in half lengthwise and make some superficial cuts in the pulp, then place it on a baking tray sprinkling with salt and then cover with aluminum foil.
We put in the oven for 20 minutes, when they temper we remove the center of the pulp, leaving about one centimeter of meat stuck to the skin, and we prick the pulp that we have extracted.
While the aubergines are roasted, sauté the seasonings, season and let the mixture reduce for 15 minutes. We incorporate the meat of the aubergines and join this filling with two tablespoons of breadcrumbs and aromatize with oregano or chopped basil.
Fill the aubergines with the vegetable mixture and place them again in the oven with the grated cheese on top of each one.
Grind low in a utensil to roast in a (grid) about 6 minutes until the cheese browns.
