Vegetarian tagine recipes are healthy, easy to prepare and taste really good. You can use almost all types of vegetables. In this simplified recipe, I am going to show you how you can make a tagine with potatoes, carrots, Zucchini and olives. Olive oil, onion and garlic form a delicious Sauce. The result is simply SUPER!
Ingredients and preparation (For 3 people)
- 1 onion
- 4 potatoes
- 1 Zucchini
- 3 carrots
- Olive
- 1 cloves minced garlic
- Parsley (finely chopped)
- Coriander (finely chopped)
- 2 TBSP olive oil
- 1/4 of a lemon
- Spices: salt, pepper, ginger, turmeric, Kummin, and saffron
Preparation
Potatoes and carrots wash and peel. Potato cut into quarters and carrots cut into small pieces.
Zucchini cut into quarters.
All the spices, the olive oil, parsley and coriander in a small bowl and stir
Potatoes, carrots, and Zucchini in a large bowl with the spice mixture and let marinate for about 30 minutes let it rest (optional)
The olive oil in a tagine and heat, then the onion and the garlic in thin slices and briefly sauté
The marinated vegetables, olives, and lemon and sauté in low heat for 30 minutes.
The tagine of short leave to cool and serve with Pitta bread.
