FRIED LATVIAN POTATOS
How to make fried potatoes or chips at home. Fried potatoes are the classic comfort food. Whether you're making a special weekend breakfast or you need a hearty dinner side.This is a really easy recipe. It is very filling, delicious meal and best of all its very cheap to make.
Call them fried potatoes, home fries, home-fried potatoes, or cottage fries, they all mean the same thing -- thinly sliced potatoes or wedges that are usually cooked in butter or oil.
Fried potatoes are perfect on their own or as a delicious accompaniment to any meal. There are quite a few good ways to make fried potatoes, but I will show you the most commonly enjoyed shallow-fried potato dishes in Latvia. This dish is also perfect for vegetarians without the meat. It serves 2-4 people depending how much you want to eat.
Ingredients
4 medium potatoes
1 pack of pancetta or salo ( optional)
1 onion
25 gr of butter
1 egg - optional
Salt & Pepper to taste
Directions
Step 1: Chop your onion nice and fine.
Step 2: Wash and peel your potatoes and cut them into stripes or wedges
Step 3: Fry your onion first with butter and oil for few minutes. Then add your pancetta and your potatoes. Mix them up and leave to fry for 5 minutes on medium heat so you start to get that cripsy outside.
Step 4: Keep moving the potatoes around, add the egg when potatoes almost done and serve.
